Dreamy Chocolate Cake Recipe

A month or so ago, one of my besties and I took a unicorn cake decorating course at a lovely little bakery close to her house. It was so fun and the cakes turned out so sweet. But even better than the course? THE CAKE. 
Oh my word, the cake was light, airy, flavourful and moist...and unfortunately, I did not have the recipe. Since then I've been searching like a sugar- obsessed fiend (which I guess I totally am), searching for the perfect cake recipe. I've tried at least 5 which all turned out dense, a little dry and mostly tasting like a big pancake. Ew. 

So, while at the farm, visiting my mom, I was complaining that I couldn't find a good cake recipe and that I'm destined to only make boxed cakes and boxed cakes alone. My mom quickly went to her little box and pulled out this recipe that she had gotten from my cousin Stephanie. I quickly made it the next day and it was AMAZING. 

The chocolate is rich, the coffee balances out the flavour so it isn't too sweet and the texture is soft, moist and oh so light. Even Donald went for seconds, despite being totally caked out from my past failed attempts!
Now if only I could find that perfect vanilla cake recipe...


Dreamy Chocolate Cake Recipe 

Ingredients:
1 3/4 cup flour
2 cups sugar
3/4 cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup oil
2 large eggs, room temperature 
1 teaspoon vanilla
1 cup freshly brewed hot coffee

Directions
  1. Combine dry ingredients in a stand up mixer 
  2. In another bowl, combine buttermilk, oil, eggs and vanilla
  3. Slowly add the wet ingredients to the dry, with the mixer on low, just until incorporated. 
  4. Scrape the sides and bottom of the bowl and add coffee, mixing only to combine. Be sure not to over mix!
  5. Pour into pan that has been lined with lightly oiled parchment paper.
  6. Bake at 350 degrees for 35-40 minutes (25 minutes for cupcakes)
  7. Cool before frosting with buttercream or cream cheese frosting
I used a 1M tip in a circular motion for the rosette effect and with the same tip, piped small, star-like flowers to look like a hydrangea.
